Vegetable Manchurian

Vegetable Manchurian


Preparation Time : 30 minutes
Cooking Time : 40 minutes.
Serves / Makes : 6


Ingredients
for the manchurians:
potatoes boiled pealed and mashed 500 g.
cabbage finely shredded 3/4 cup.
carrrots grated 1/2 cup.
maida 3 tbsp.
oil to deep fry.
salt and pepper to taste.


for the gravy:
3 large onions made into a paste in a mixer.
2 large tomatoes made inot a paste in a mixer.
soya sauce 3 tbsp.
chilli sauce 3 tbsp.
vinegar 2 tbsp.
tomato ketchup 1/2 cup.
cabbage finely shredded 1/4 cup.
one medium sized onion cut into 4 and leaves separted.
4 - 5 green chillis cut lengthwise.
ajinomoto 2 tbsp.
salt and pepper to tast.
oil as required.
water 2-1/2 cups.


Method
recipe:
manchurians:
1. mix all the ingredients to form a dough.
2. shape the dough into cutlets by hand.
3. heat oil in kadahi.
4. fry the cutlets and keep aside.


gravy:
1. heat oil in kadahi.
2. fry onion paste till golden brown.
3. add tomato paste.
4. fry till the paste starts leaving kadahi.
5. add 2-1/2 cup water.
6. add soya sauce, chilli sauce, vinegar, ajinomoto, ketchup, salt and pepper.
7. add shredded cabbage, separated leaves of onion, and chillis.
8. cook for 15 to 20 minutes.


add hot gravy to the cutlets just before serving.

Types of Vegetarians

Whatever your reasons are, you have decided to explore the interesting and exciting world of vegetarianism. If you have been a vegetarian for a while or have been researching about vegetarianism, you might already have some idea of what kind of vegetarian you are or want to be.



Many people think of vegetarians as one homogeneous group that just doesn’t eat meat. But nothing could be further from the truth. There are different categories of vegetarians as diverse as the reasons for going vegetarian in the first place.



A vegetarian is generally defined as someone who doesn’t eat meat. But someone who is vegetarian could conceivably eat dairy products such as milk, eggs and cheese. A lacto ovo vegetarian doesn’t eat meat, fish or poultry, but does consume eggs, milk or cheese. A lacto vegetarian consumes milk and cheese products, but doesn’t consume eggs.



A vegan is someone who doesn’t consume any animal product or by-product, including dairy food. They eat only vegetables, fruits, nuts, grains and legumes. They also don’t use animal products, such as leather. Vegans also don’t use white sugar because it’s often processed with a substance derived from animal bones that whitens the sugar.



There are other categories within the vegetarian community. Fruitarians, for example, eat only fruit. Their rationale is that fruits, including fruits such as tomatoes, are self-perpetuating and don’t need to be planted to create the food source. They consider it a way of eating that’s most in balance and harmony with the earth, the most natural.



All of the above will eat cooked vegetables, fruits and legumes. There is also a growing movement towards eating only raw or living foods. This based on the assumption that cooking food processes most of the nutrients out of it, and to get all the nutritional value, vitamins and amino acids from food, it’s best consumed raw, or juiced. If cooked at all, it should only be cooked to slightly over 100 degrees, so the nutrients are still retained.



The more restrictive you become with your diet, however, the more educated you need to become to be sure you’re getting all the necessary proteins and vitamins that you need to maintain good health, especially muscle and heart health.



Here are 4 types af vegetarianism



1. Lacto vegetarians- Their diet consists of no animal products, or eggs, but do include dairy products, such as milk, cheese, yogurt, etc.



2. Ovo-Vegetarians- Their diet consists of no animal or diary products but will eat eggs.



3. Lacto-ovo vegetarians- As you may have already guessed; don’t include any animal products in their diet but will include dairy products and eggs.



4. Vegan- Their diet consists of only plant-based foods, which means it excludes everything that has come from an animal, such as meat, dairy, eggs, honey, etc.



If you haven’t decided what kind of vegetarian you would like to be don’t worry! Not everyone knows exactly what kind they want to be at first (I didn’t), but by experimenting and trying different recipes you will figure out what you need and want or don’t need and want.

INDIAN BEEF CURRY

1 lb. Lean stewing beef

2 cloves garlic (mashed)

2 Tbsps. Tomato paste

1 Tbsps ground coriander

½ pint yougurt

salt to taste

1 large onion ( chopped )

1 inch piece of fresh ginger root ( chopped )

2 Tbsps. Shortening

2 Tbsps. Turmeric

Marinate the piece of stewing beef in a mixture of yogurt, salt, garlic, ginger, and about 1 cup of water. Allow to stand at least two hours. Saute onions in shortening until golden, add coriander, turmeric, and tomato paste. Cook for about 5 minutes, add the marinated meat, and allow to cook for about 40 minutes over a low heat. Serves 3 or 4.

NOODLES WITH MEAT AND RICH SAUCE

500 g beef in one piece (topside or round )

1 celery stalk with leaves

1 teaspoon salt

plenty of freshly ground black pepper

could water to just cover meat

Gravy :

8-12 dred red chillies, soaked

3 candlenuts or macadamias

8-10 shallots or 1 ½ medium red or brown onions

3 slices lengkuas or substitute

2 tablespoons oil

2 teaspoons coriander, freshly ground

2 teaspoons salted soya beans mashed

½ cup mashed boiled sweet potato

Additional items :

500 g fresh yellow noodles (Hokkien mee ) or 250 g ( 8 oz ) dried wheat noodles

250 g ( 8 oz) beansprouts, skalded

Garnish:

2 spring onions

1 freshgreen and 1 fresh red chilli, sliced

3 pieces hard beancurd, deep fried and sliced

3-4 chinese limes, halved, or 1 lemon cot in wedges

put beef into a saucepan with celery, salt, pepper, and just enough water to cover, and slimmer gently until cooked. Dice meat and reserve 2 cups beef stock.

To prepare gravy,grind chillies, candlenuts, shallots and lengkuas together and fry in oil in a deep pan for 3-5 minutes.

Add coriander and cook another minute before putting in salted diced beef. Mix thoughly and add sweet potato which acts as a thickening agent. Heat gravy though thoroughly.

If using fresh noodles, scald in boiling water for 1 minute, then drain thoroughly. If using dried noodles, boil as directed on the packet until just cooked, then drain.

To serve mee rebus, put some of the noodles and beansprouths into the bottom of large individual bowls and pour over gravy. Garnish with listed items. Alternatively, if you have a very large deep bowl, the mee rebus can be served in this, with each diner helping himself.

INDIAN MUTTON SOUP

6 shallots , or 1 small red or browen onion, finely sliced

2 tablespoons oil

2 tablespoons ghee or butter

1 medium red or brown onion, sliced

2 slices fresh ginger, very finely chopped

4 cloves garlic, very finely chopped

1 sprig curry leaves (karuvapillai )

2,5 cm ( 1 in ) stick cinnamon

2 cardamom pods, bruised

3 cloves

375 g ( 12 oz ) muttonor lamb, cubed

1 teaspoon finelly ground black pepper

½ teaspoon chilli powder

3 teaspoons coriander powder

½ teaspoon cummin powder

4 cups water

1 teaspoon salt

1 ½ cups coconut milk

llime or lemon juice to taste

Fry shallots in hot oil until crisp and golden brown. Drin and set aside in a screw-top jar for garnish.

Heat ghee and gently fry onion, ginger, garlic, curry leaves,cinnamon, gardanom and cloves for 3 –4 minutes, stirring frequently. Add meat, pepper, chilli powder, coriander and cummin and fry gently for a new minutes until meat is well coated with spices. Add water and salt, cover pan and simmer until meat is tender. Add coconut milk and cook for another 10 minutes.

Sprinkle with lime or lemon juice to taste, and garnish with fried shallot. Serve with chunks of Franch bread.

SZECHUAN SOUR HOT SOUP

30 g ( 1 0z ) pork, shareded

30 g ( 1 oz ) chicken breast, sharedded

2 teaspoons peanut oil

2 heaped tablespoons cloud ear fungus ( mok yee), soaked

4 large dried black mushrooms, soaked and shredded

100 g (3 ½ oz ) soft beancured (tauhu) diced

3 cups chicken stock

1 teaspoon light soya sauce

1 teaspoon Chinese rice wine or dry sherry

1 teaspoon sesame oil

2-3 teaspoon malt vinegar

¼ - ½ teaspoon chilli oil (optimal )

salt to taste

1 tablespoon cornflour, mixe with ¼ cup water

1 egg, lighty beaten

white papper

spring onion, finely chopped

fty the pork and chicken gentlyin peanut oil until they change color. Add the soaked and drained fungus and musshroms oil and stir. Put in beancurd and stock and simmer 10 minutes. Add all the seasonings except pepper and simmer 3 minutes. Thicken with cornflour mixture.

Just before serving, stir in beaten egg. Sprinkle very liberally with white pepper and garnish with spring onion.
